This month’s recipe from Carine is the delicious Pumpkin Parmentier, and we are here to share all the details with you!
Ingredients for 4 people
First and foremost, a Parmentier always includes potatoes. You will need two potatoes and 500 grams of minced beef. You will also need a pumpkin (or two if it’s small) and five carrots. For seasoning, you’ll need spices! A pinch of sweet paprika, a pinch of mild chili powder, grated nutmeg, salt, and pepper.
Additionally, you will need one onion, a clove of garlic, some parsley, and grated Emmental cheese to add a delicious, cheesy, gratinéed topping.
The Recipe for Pumpkin Parmentier
First, prepare the vegetables: wash the pumpkin, peel the carrots and potatoes, and cook them to make a mash. Carine recommends cooking them separately, as their cooking times differ, and steaming them to preserve as many nutrients as possible.
Once cooked, season the mash with salt, pepper, and grated nutmeg.
Now, let’s focus on the meat. In a frying pan, brown the onion, then add the minced beef, chopped parsley, and crushed garlic.
Sauté the mixture, then add salt, pepper, paprika, and mild chili powder.
It’s time to assemble! In a gratin dish, layer the meat mixture, then top it with the mashed potatoes.
Sprinkle with grated Emmental and bake for about 20 minutes at 180°C (gas mark 6). And there you have it, ready to enjoy!
