Pumpkin parmentier

Pumpkin parmentier: a seasonal dish that’s both delicious and comforting. It’s Carine’s recipe of the month, and we’ll tell you all about it in this article.

 

Ingredients for the pumpkin parmentier for 4 people

 

First of all, parmentier means potatoes. You’ll need two potatoes and 500 grams of minced beef. You’ll also need one pumpkin (or two if it’s not too big) and five carrots. To season your pumpkin parmentier, use spices! A pinch of sweet paprika, a pinch of sweet chilli, grated nutmeg, salt and pepper.

You’ll also need to add an onion, a clove of garlic, some parsley and some grated Emmental cheese to give it a gourmet, au gratin flavour.

 

The recipe for pumpkin parmentier

 

First of all, you’ll need to prepare the vegetables: wash the pumpkin and peel the carrots and potatoes so that you can cook them and make a purée. Carine advises you to cook them separately, as the cooking time will be different, and to steam them to preserve as many nutrients as possible.

Now it’s time to season your purée with salt, pepper and grated nutmeg.

Now we’ll deal with the meat. In a frying pan, brown the onion, then add the beef, chopped parsley and pressed garlic.

Now you can brown the mixture, adding salt, pepper, paprika and sweet chilli.

Now it’s time to assemble! Pour the meat mixture into a casserole dish and place the mashed potatoes on top.

Sprinkle with the grated Emmental cheese and bake for around 20 minutes at 180°C (gas mark 6). Now all you have to do is enjoy!
